Occurrence and detection of (toxic metabolites of) moulds in cereals and cereal products; a hazard identification

Synopsis

The risk of negative health effects after exposure to (toxic metabolites of) moulds present in cereals and cereal products must be determined by carrying out a risk analysis. Hazard identification shows that especially the genera Aspergillus, Penicillium, Fusarium and Alternaria are important in this respect. A (non exhaustive) literature review is given to report on the presence and detection of the mould genera mentioned and their toxic metabolites, and, to a lesser extent the biosynthesis of toxic metabolites. Also a literature review of the application of molecular biological techniques with regard to (toxic metabolites of) moulds is given. Subsequently a desciption is given of the way research will be carried out at the RIVM to determine semi-quantitatively the presence of the (toxic metabolites of) mould genera mentioned. How these investigations fit into the concept of the overall risk analysis and how this risk analysis can be applied in the future is also discussed.
