English Abstract Studies carried out in 1989 on the efficacy of rendering processes in the Netherlands in the elimination of microbiological agents, showed that spores of Clostridium were present in 12,2% of the samples taken directly after autoclaving. C.perfringens was detected in less than 2% of the samples. In samples of final products no Salmonella was detected and the number of Enterobacteriaceae was <10 cfu/gram in all samples. In samples of dust, taken from the processing halls, higher numbers of Enterobacteriaceae and presence of Salmonella were determined incidentally.
