English Abstract
In the study 'What is on our plate? Safe, healthy and sustainable diets in the Netherlands', RIVM identified the societal challenges for healthy, safe and sustainable diets, now and in the future. The study also provides building blocks for food policy in the Netherlands, which, in addition to an integrated approach to these issues, takes into account a wide range of food-related values, such as convenience, affordability and animal welfare.

This report is the methodological justification of this study and describes the methods used. First, the report discusses how qualitative analyses were used to prepare trend scenarios for the safety, health and sustainability of the diet.

It then describes how the effects of three future scenarios were estimated, and how opportunities and choices associated with an integrated food policy were derived. Finally, a case study is discussed in which a multicriteria analysis was used to weigh the effects of alternatives to animal proteins. The results of the case study and how they were used in 'What is on our plate?'are also described.

In de studie 'Wat ligt er op ons bord? Veilig, gezond en duurzaam eten in Nederland' heeft het RIVM de maatschappelijke uitdagingen voor gezonde, veilige en duurzame voeding - nu en in de toekomst - in kaart gebracht. Daarnaast biedt de studie bouwstenen voor voedselbeleid in Nederland, waarbij naast een integrale benadering van deze vraagstukken ook rekening wordt gehouden met de uiteenlopende waarden van voedsel, zoals gemak, betaalbaarheid en dierenwelzijn.

Dit rapport is de methodologische verantwoording hiervan en beschrijft de gebruikte methoden. Als eerste wordt besproken hoe met behulp van kwalitatieve analyses trendscenario's voor de veiligheid, gezondheid en duurzaamheid van het voedingspatroon zijn opgesteld.

Vervolgens wordt beschreven hoe de effecten van drie toekomstscenario's zijn geschat. En hoe daaruit kansen en keuzen zijn gedestilleerd die zich voordoen bij integraal voedselbeleid. Tot slot wordt een casestudy besproken waarin met behulp van een zogeheten multicriteria-analyse de effecten van alternatieven voor dierlijke eiwitten zijn gewogen. De resultaten van de casestudy en hoe ze zijn gebruikt in 'Wat ligt er op ons bord?' zijn eveneens beschreven.
