English Abstract The effects of histamine administrated in fish samples
to 8 healthy volunteers (4 females and 4 males) have been studied. The fish
samples contained 0, 45 or 90 mg histamine which had been metabolized by
photobacteria in fish out of histidine, or 90 mg histamine added to fresh
fish. The volunteers had the samples for breakfast in random order, with
intervals of one week. Attention was paid to clinical symptoms. The pH of
the stomach contents, the histamine concentration in plasma and the
histamine metabolites in urine were also recorded.
