Samenvatting

Een duurzaam voedselsysteem voorziet in de voedingsbehoefte van alle mensen, nu en in de toekomst, en beschermt tegelijkertijd de ecologische systemen op aarde. Het huidige voedselsysteem is niet duurzaam. Vooral vlees (voornamelijk rundvlees) maar ook zuivel en kaas vormen de grootste milieubelasting. De milieubelasting is ook relatief hoog voor gewassen uit de glastuinbouw. Groente- en fruitgewassen die in Nederland in de vollegrond worden geteeld, hebben een relatief lage milieubelasting. Ook die van brood en graanproducten is relatief laag. Dit blijkt uit de eerste resultaten van een analyse van de milieubelasting van het huidige Nederlandse voedselconsumptiepatroon door het RIVM. Hierbij is naar zes milieuthema's gekeken: klimaatverandering, landgebruik, waterverbruik, verzuring, vermesting en bodemuitputting. De analyse is gebaseerd op een database met gegevens over de milieubelasting van een breed scala aan voedselproducten die het RIVM momenteel aan het bouwen is. Deze database is via de Voedselconsumptiepeiling (VCP) gekoppeld aan ons consumptiepatroon. Hiermee is het mogelijk om de milieudruk van producten per thema te bepalen en in kaart te brengen wat voor effect veranderingen hebben, bijvoorbeeld in productieprocessen of consumptiepatronen. Van de in Nederland geconsumeerde producten wordt gemiddeld 20 procent verspild. Voedselverliezen treden op in de gehele productie- en distributieketen van producten. Die bestaat uit de teelt van gewassen, de verwerking ervan in fabrieken, het transport naar Nederland, de opslag en koeling, de supermarkt (houdbaarheidsdata) en de consument. De verspilling vindt op alle onderdelen plaats, maar is het grootst bij de consument. Een duurzamer Nederlands voedselsysteem kan bereikt worden door de productieprocessen te verduurzamen, en verliezen in de keten te verminderen. Aan de consumentenkant kan erop worden ingezet voedselverspilling te verminderen en het voedselconsumptiepatroon te veranderen door minder en anders te eten. Een verschuiving van dierlijke naar plantaardige voedselproducten is het meest effectief voor bijna alle milieuaspecten.

Abstract

A sustainable food system supplies food to all people, now and in the future, and protects the ecological systems on Earth. The current food system is not sustainable. Particularly meat (beef meat), but also dairy and cheese cause high environmental impact, followed by dairy and cheese. Vegetables and fruits grown in The Netherlands in the open ground cause relatively little environmental pressure. The pressure caused by vegetable and fruit crops from heated greenhouses is significantly higher. The environmental impact of bread and cereal products is relatively low. These results follow from an analysis on the environmental impact of the current Dutch food consumption pattern done by RIVM. The focus was on six environmental issues: climate change, land use, water use, acidification, eutrophication and soil depletion. The analysis was based on a database with information on the environmental impact of many food products that RIVM is currently constructing. This database is via the 'Food consumption surveys' of RIVM (VCP) coupled to our consumption pattern. In this way, it is possible to assess the environmental pressure of products per theme and to map the effects of possible changes in for example production processes or consumption patterns. Waste of food amounts to, on average, 20 percent for the products consumed in The Netherlands. Wasting of food occurs throughout the whole production and supply chain of products, but is largest at the consumer's side. A more sustainable Dutch food system can be achieved by making production processes more sustainable as well as by reducing food losses throughout the life cycle of products. At the consumer's side, focus should be on reducing food waste and changing food consumption patterns: eat less and eat differently. Concerning the second issue, a shift from animal to vegetable food products will be most effective for almost all environmental impacts.
